Nisin
Nisin is a natural antimicrobial peptide produced by Lactococcus lactis. It is widely used as a food preservative (E234) to inhibit the growth of bacteria, especially Gram-positive bacteria such as Listeria and Clostridium. Nisin is heat-stable, safe for consumption, and approved by WHO and FDA.
